Made from soybeans, tofu is a great healthy addition to anyone’s diet – herbivore or carnivore!  Here are just a few known health benefits:

  • Is higher in protein and quality than all other legumes
  • Soybeans derive about 35-38% of their calories from protein
  • 1/2 cup serving of cooked soybeans provides 4 mg of iron.
  • Soy foods are high in zinc
  • Reduces the risk of developing breast and prostate cancer
  • There is epidemiologic (population) evidence suggesting that breast cancer patients may benefit by consuming soy foods.
  • Provides heart-healthy fat and one of the few good sources of both essential fatty acids. Most of the fat in soybeans is unsaturated!

Going green for the holidays

I can not believe it’s December; this year has just flown by! The holidays are right around the corner and even if it seems too soon to start thinking about them, it’s not! While the holidays are filled with happiness and joy, there’s also a good amount of waste that takes place between the numerous dinner parties and gift exchanges. If you’re on a budget, the holidays can be a trying time for your wallet as you purchase gifts for friends and family.

Going green for the holidays is a great solution to cut back on waste and give gifts from the heart. The tough economy these last few years has also prompted many people to start being more frugal and make do with recycled materials – going back to the thought of ‘waste less’ is better for the budget and gives us all a chance to improve our environment. Here are some great tips for going green this holiday season:

  • Gift wrapping –If you love using wrapping paper, look for recycled paper at the retail store and be sure to recycle the paper after the holiday. Think outside the box when it comes to gift-wrapping! Newspaper with ribbon or twine looks delightfully old-fashioned. Hit yard sales or thrift stores for baking tins, boxes or baskets to pass gifts out in or wrap gifts in tea towels or vintage fabrics!

  • Bake – Your friends and family will love handmade goodies like cookies or seasonal breads. Making a few batches of cookies is an affordable and thoughtful gift to hand out — wrap up a dozen in cellophane bags and tie with ribbon to give them a finished look.

  • DIY – Handcrafted gifts are highly appreciated – not to mention they are better for the wallet. Check websites like Pinterest to get gift ideas – candles and sugar scrubs are two simple DIY projects sure to be useful to your gift recipient!

Another way to stay green this holiday is to avoid using disposable dinnerware during parties. Real dishes and utensils may create more of a cleanup, but reduces the amount of trash – which is especially important if you plan to throw a few parties over the holidays. Hang up LED string lights outside and on the tree to save electricity and be sure to use eco-friendly bags instead of plastic when you’re out shopping!

Give Thanks…

Give Thanks

We should always give thanks but a hectic life that we all have easily makes us forget how much we all have to be thankful for. Thanksgiving is a good reminder of that. So, here is what I’m thankful for today…

My family & their health….being employed…my wonderful husband-to-be…the internet…my sister moving closer to me…seasons…hot chai…my herb garden…friends who listen and understand me…a roof over our head…crisp, fresh air…my DSLR…PB&J…Laughter…Leggings and boots…my blog…our freedom

While every Thanksgiving is an opportunity to spend time with loved ones and reflect on our blessings, this holiday season is a distinctly special time to give thanks for all we have in the aftermath of Typhoon Haiyan, the storm that devastated Cebu Island in the Philippines earlier this month.

As we eat dinner and spend the day with our loved ones and friends during this season of thanks and giving, World Vision is making it easy to give back this year through the Philippines Disaster Response Fund, created to provide emergency food, water, and hygiene kits to survivors of the typhoon. World Vision relief workers distributed the first round of supplies – weighing in at 25 tons – to nearly 780 families on November 14, 2013, and plan to continue distributions in the coming days. I can not even imagine what these survivors are going through losing loved ones, their homes and everything they know in a matter of seconds. If we can give what we are able to help survivors of this tragedy, we can all make a little difference.

Happy Thanksgiving!

Thanksgiving Side Dishes (& all vegetarian-friendly!)

I’ve been so bad about blogging this month, I just realized I’ve only written only two posts this month and the month is almost over!! Fall festivities, traveling and my bachelorette party are to blame for my lack of blogging. This past weekend was the only weekend where I’ve been home! And, I was ecstatic to not have any plans. Sometimes it’s just nice to sit at home and catch up on work. I’ve soaked up every second of this “me weekend”! But now I should have more time to get back to my blog again!

With Thanksgiving in just 4 days, I will be posting different Thanksgiving-related posts until Wednesday. This first one being focused on great (and may I add vegetarian) side dishes. While the turkey is usually the main event for most people, as a vegetarian that is the last thing on my mind! All I’m thinking about is the side dishes! Here are 5 recipes that can be mixed and matched and may even steal the show from the turkey! Plus, offering a variety of side dishes will keep your guests happy and full.

Decorate with a Vintage Camera

There’s something chic about mixing old and new in home decor and one piece I love is a vintage camera. There are so many styles of cameras out there – just walk around an antique store or flea market and you’re sure to find a unique or old-fashioned camera somewhere! Photography, or art itself, is an essential part of home decor and if you love taking pictures or just appreciate photography, then collecting vintage cameras is a perfect way to add a bit of personality to your space. How do you decorate with vintage cameras? It’s simple – complement or contrast your existing home decor with a vintage piece to offer your space style and function. Check out some of these ways to include vintage cameras into your home:

  • Bookend – Add style to a bookshelf by using vintage cameras as bookends! Usually an inexpensive option compared to purchasing bookends, vintage cameras add a lovely visual to otherwise bland shelves. Using cameras as bookends is perfect if you have various styles and aren’t sure what to do with them. Incorporate the vintage cameras on different shelves to tie the entire look together.

  • Paperweight – Use a vintage camera as a paperweight on any table. If you’re into photography, setting out a few of your favorite cameras on a work desk is a fun way to show off your personality and add a unique look to the space. Want to add an old-fashioned camera to the living room? Stack a few of your favorite photography books on the coffee table and top them off with a vintage camera.

  • Create art – While photography is an art in itself, why not display your eclectic collection of vintage cameras in the home? Instead of hiding your cameras away in a box, install a few floating shelves and show off your collection!

If your space is modern and fresh, incorporating vintage cameras into the decor is the perfect way to blend old and new. Check out websites like Etsy or Ebay to find unique, inexpensive vintage cameras and find perfect pieces to add to your collection!

Jimmy Kimmel Ruins Halloween

I saw these videos the year it came out and completely forgot about them until I was reminded again about this week. After rewatching them, I forgot just how funny they were and thought they were perfect for today’s post! For the last two years, comedian Jimmy Kimmel issued an open challenge to his audience after Halloween. Two years in a row, the challenge went viral and was a YouTube sensation with over 40 million hits! Parents that took on the challenge had to tell their kids they ate all their Halloween candy, then upload video of their response.  The result was HILARIOUS! The reactions range from complete freak outs to insane crying. These kids (mostly toddlers), crack me up!

Watch below to see those kids’ priceless reactions in case you’ve missed them. We can’t help but laugh while feeling a little sorry for them.  Happy Halloween!
